Veg Soup
1 Celery Stalk diced
3 carrots slice
2 onions diced
2 zucchini halved and sliced
2 squash halved and sliced
Olive oil and sauté until veggies are tender
1 tb of 4 cloves of chopped garlic, 1oz dill, 1oz parsley, 1oz chives, and 1 oz cilantro in a food processor with enough olive oil to almost make it a paste (it’s a gremolata so you can add the rest to other dishes)
Sauté 1-2 mins
2 cups White wine to deglaze and stir
6lb 12oz purée tomato
6lb 6oz cannellini beans
1oz Oregano
1oz Thyme
1oz Chives
1oz Parsley
Simmer 20 mins
2 cups Spinach
Simmer 5 mins
