Strawberry Cottage Cheese Mousse with Cucumber & Radish Topping
Ingredients:
- 1/2 cup cottage cheese
- 1/2 cup strawberries, chopped
- 2 tbsp brown sugar (adjust to taste)
- 1 raw egg (use the yolk)
- 1 small cucumber, finely diced
- 2-3 radishes, finely sliced
- 1/4 of an onion, finely minced
- 1/4 cup broccoli florets, finely chopped (optional, for an extra crunch)
- Pinch of salt (optional)
- Prepare the Strawberry Cottage Cheese Mousse:
- In a blender or food processor, combine the cottage cheese, strawberries, and brown sugar. Blend until smooth and creamy.
- Separate the egg yolk from the white. In a small bowl, whisk the yolk until it becomes slightly frothy.
- Gently fold the egg yolk into the strawberry cottage cheese mixture. This will give the mousse a richer texture.
- Chill the Mousse:
- Transfer the mousse into serving dishes or glasses.
- Refrigerate for at least 30 minutes to allow it to set.
- Prepare the Cucumber & Radish Topping:
- In a small bowl, combine the diced cucumber, radishes, minced onion, and finely chopped broccoli (if using).
- Add a tiny pinch of salt if desired to enhance the flavors. Mix well.
- Assemble and Serve:
- Once the mousse is chilled, remove it from the refrigerator.
