The iconic Disney Pineapple Dole Whip can easily be made at home with only a few simple ingredients!
This sweet, frosty fruit treat is the perfect dessert to cool off on a hot summer day.

Ingredients
4 ounces pineapple juice
1 big scoop vanilla ice cream (about 3/4 cup)
2 cups frozen pineapple chunks
2 tablespoons sugar , optional but recommended
splash of lemon juice
pinch of salt.

Instructions
Combine all the ingredients in a blender (in the order listed); blend until smooth and ultra creamy, pushing down the pineapple chunks if necessary, about 3 minutes.
At this point you can pour into dessert cups. But I like to freeze the mixture for 30-40 minutes, then transfer to a piping bag with a 1M “star” tip (to get that iconic Dole Whip swirl.)
Swirl into glasses.
(To help the soft-serve hold its shape even longer, freeze the swirled whip another 20 minutes.)

I've been making this on one of the weekend days for breakfast. Delish af, packed with protein and nutrients. Zero added sugar. Keeps you full for a while and helps you with intermittent fasting, if you're into that.

Ingredients are approximate. Adjust to your liking.

Big ass pancake, made of one egg, 1/3 of mashed banananananner, one scoop (serving) of protein powder, 1/4 cup oats, 1/4 cup almond flour, 1/4 crushed almonds (you could something similar, even some chia seeds), baking soda, 1/2 cup buttermilk / kefir (or milk);
If you've ever made pancakes, you'll know when to add more almond flour or subtract liquid for desired consistency.

Topped with plain greek yogurt, mixed well with 1/3 mashed banananananer (for sweetness), two diced and mashed strawberries, some diced and mashed blueberries, added buttermilk / kefir or even milk for desired consistency;

Sprinkled with four diced trawberries, 1/3 sliced bananannaaner and diced blueberries.

I made cheesecake. I blended the mixture in two parts, for two layers, with a high speed blender until consistency was very creamy.

Strawberries were diced and mixed (not blended) into light layer with a bit of almond flour to compensate for extra moisture.

Blueberries were sliced and mixed (not blended) into the dark layer, with almond flour added to compensate for extra moisture.

I made strawberry cookies for breakfast. Flourless, eggless, milkless and added sugarless.

2 cups oats (next time I’ll probably try a bit less)
2 large bananas mashed
1/2 cup peanut butter (almond butter or any other nut/seed butter of choice would work)
1/4 cup strawberries chopped
1/4 cup dark choc chips

Mix everything together in a bowl.
Roll into 9-12 even sized balls and place on lined baking tray.
Press balls into cookie shape - there’s no leavening agent, so they’ll keep their shape throughout.
Bake at gas mark 4 for 12 minutes. Do not over bake, as the exterior may become hard and the inside rubbery.
Serve and enjoy. Store in fridge for up to a week, or can be frozen for up to six months.

Chocolate mousse cookie cups

This recipe makes 8-10 cups.

For the cups:
2 bananas - mashed
2 cups oats
1/4 cup unsweetened cacao or cocoa powder
1 - 2 tablespoons maple syrup (or similar)

For the filling:
1 cup greek yoghurt
2 tablespoons unsweetened cacao/cocoa powder
1 tablespoon maple syrup (or similar)

+ sliced strawberries, raspberries, blueberries or any other berry you like

  1. Mash the bananas. Add the oats, cocoa powder and syrup. Stir until combined
  2. Press the mixture into greased muffin pan and form into cups
  3. Bake at gas mark 4 for about 20 minutes
  4. Let the cookie cups cool down
  5. Mix the ingredients for the filling together. Fill the cups with the filling. Add the berries on top
  6. Store in the fridge

6 Cheese Mac n Cheese

Recipe Makes 8 Servings

Ingredients:
  • 8 Tbsp Butter
  • 1 Tbsp Onion Powder
  • 1 Tbsp Granulated Garlic
  • 1 Tbsp Freshly Ground Black Pepper
  • 2 Tbsp Spanish Paprika
  • 2 Cups Heavy Cream
  • 1½ Cups Whole Milk or 2% Milk
  • 4 Tbsp All Purpose Flour
  • 8 oz Mild Cheddar (Shredded)
  • 8 oz Sharp Cheddar (Shredded)
  • 8 oz Muenster Cheese (Shredded)
  • 8 oz Gouda Cheese (Shredded)
  • 8 oz Gruyere Cheese (Shredded)
  • 8 oz Havarti Cheese (Shredded)
  • 1½ Lbs of Elbow Noodles (or your noodle of choice)
Instructions:
  1. Preheat oven to 375 F
  2. Melt butter in a large stockpot over medium heat. Add Flour and stir constantly till it is combined with butter and starts to turn a little brown.
  3. In a separate pot bring water to boil for elbow noodles. Cook elbow to El dante. Then strain.
  4. Add Heavy Cream, Milk, Black Pepper, Onion Powder, Granulated Garlic and 1 Tbsp of Paprika mix and bring to a low boil.
  5. Mix Shredded cheese into a bowl and pull out 8 oz of mixed cheese and save for topping later.
  6. Once the cream rue is at a low boil, bring to medium low heat and add in 5 cups of cheese not being save for topping and stir till completely melted.
  7. Pour in Elbow noodles and mix until noodles are well coated with cheese mix. Then pour mix into a 9x13 baking dish and top with remaining cup of mixed cheese and layer remaining Paprika across the top.
  8. Bake for 30 to 45 minutes until the cheese is bubbling on top
 
I misplaced my baking tray for brownies, had to use a cake tin.

there's so many to reply to but mostly just to say yum and use lots of drooling emoji's! so instead: for choc brownies in the future, put just a touch of (non himalayan) sea salt granules on top. Just a few. Not for decoration either, the salt adds a richness. Now, I personally love salt but i've had some of my friends try my brownies the same way and they loved them! Give it a try! maybe on just one brownie piece at first if you like :)
 
I tried adding sea salt granules on top before, but it didn't quite suit my taste. Nonetheless, I really appreciate your suggestion, and I'm always open to trying new ideas in the kitchen. Thanks for sharing.

so looking forward to adding a few of my pale-by-comparison dishes, but alas, rent takes priority over restocking my kitchen, but recipes are coming, oh yes :p
