Its just pasta, some sauce that was much more effort than i thought, a few different types of mushrooms, some chicken, i added some onion to, not sure why but in that went!

The dessert(s) were assembled by me but the caramel fudgey cream with crunchy bits are from woolies, three bucks a pop, the blueberries, i bought, washed and dried, so overall, cooking points i feel 3/10, taste though, omg, 10/10 for sure!
 
Different pasta attempt, Chicken (and mushroom) pesto with some SD tomatoes. Cooked at home then trundled through the city in a bit of a silly fashion to the park to compliment a study-lunch :)

again, not exactly appealing I know, but very yum!

I'm not a fan of chicken salads, but people mentioned it in chat, I knew I had to use up the rotisserie chicken and here it is:

Cranberry Walnut chicken salad

Ingredients:
Rotisserie chicken breast
Finely diced celery
Finely diced onion (I used chopped dried onion)
Mayonnaise
Ranch dressing
Dijon mustard
Freshly ground black pepper
Sea salt (I used pink salt)
Fresh dill
Chopped walnuts
Chopped dried cranberries (they can be left whole)

Combine everything in ratios and seasoning amounts to your taste (I didnt keep track, just kept going for the consistency I liked)

Serving it with diced cucumbers, Roma tomatoes, on a lettuce (or Swiss chard) leaf in a wheat tortilla and diced (or grated) aged mozzarella on top). Freakin' delish!

Vegetable pasta bake.

Sauce
Ingredients
  • 2 tins of chopped tomatoes (2 x 400g)
  • 50ml water
  • 1 onion
  • 1 medium carrot
  • 2 sticks of celery
  • 1/2 green pepper
  • 5 cloves of garlic or 5tsp ready chopped garlic
  • 1 tsp table salt
Simmer the chopped tomatoes in a pan with the water. Peel, roughly chop and then blitz your veg, add it to the tomatoes and allow it all to simmer for 30 minutes.

Pasta Bake
Ingredients
  • 300g pasta
  • veg sauce as above
  • 300g broccoli
  • 200g frozen peas
  • 1 bunch of basil
  • 2 tsp dried oregano
  • A pinch of salt and pepper
  • 100g cheddar cheese
Boil pasta as per cooking instructions, then add to a bowl with the veg sauce. Chop the broccoli and simmer for 10 min, then add to the pasta. Add in the frozen peas, basil, oregano, salt & pepper.
Mix it all together and transfer to a large baking dish. Sprinkle cheese on the top and bake for approx 20 mins at 200 celsius. Enjoy.

4. Pizza sauce, pepperoni, both cheeses, oregano and Italian seasoning

I made weirdness. (Sources at the bottom of post)

Instead of wheat flour, I used almond flour.
Instead of nutritional yeast, I used quick rising yeast.
I additionally added black pepper, garlic powder, onion powder and oregano to dough.
I added extra basil and garlic to pizza sauce.

Almond flour has no gluten, so it's going to be slightly mushy of you don't bake it sufficiently.

I dont know what to call these. I've seen people make egg muffins and pancakes in muffin pans.
I used cake layer pan instead.

Pre-baked ready to eat hash browns:

After pre-baking hash browns, I added eggs with fresh dill and cheddar (left).
Blueberry pancakes made with eggs, buttermilk and almond flour, with fresh blueberries (center).
Egg with mozzarella, spinach, grape tomatoes, basil and garlic (top right).

Started rising a bit in the over (400°F) for about five minutes:

Greek yogurt with strawberries on pancakes:

Oat cookies

1 banana
125g peanut butter
90g oats
25g dark choc chips
tsp cinnamon

Mix everything together, dollop approx 8-10 blobs onto a lined baking tray and bake for 12-15 mins at 180. Bish, bash, bosh.

Greek yogurt pizza dough

Ingredients
  • 120g plain flour
  • 143g Greek yogurt
  • 1/2 tsp fine sea salt
  • 1 tsp baking powder
  • 1tsp Italian herb seasoning
  • 1/2 tsp vegetable oil

Method
  • Pre-heat oven to 180 (fan assisted) and line a baking tray with parchment paper. Brush a little bit of oil on your paper, to prevent pizza base burning or sticking.

  • Mix dough ingredients together with a spoon, until it forms a crumbly dough consistency. Then use hands to roll into a dough ball.

  • Flour your work surface and roll the dough out into one pizza, or two mini pizzas.

  • Top with pizza sauce and whatever other toppings you want to use.

  • Cook for 15 mins (one pizza) or 10-12 mins for two mini pizzas. Leave to cool, slice and destroy. Enjoy!

Banana pancakes

Ingredients
  • 1 banana
  • 2tbsp plain flour
  • 2 eggs
  • 1tsp baking powder

Method
  • Whisk all ingredients together, spoon (I use an ice cream scoop) into an oiled pan on medium heat (I use the 1cal oil spray). This mixture makes approx 7-8 small pancakes.

  • Remove from heat, serve and top with whatever you like. I’ve used Greek yogurt, drizzle of honey, blueberries, raspberries and strawberries
