Favourite vegetarian food

Hello all.

I'm trying to be a vegetarian, and I was wondering if anyone has a favourite meal they can suggest.

I know the supermarkets have got some great veggie sections now, as I've been trying one of everything I can.

But I do like to try and cook fresh. So if anyone would like to share?

Dude yes! Hit the recipe thread, and if you find another recipe you love, post it there. That is the thread I hope never dies.

I'll admit to having 'stolen' a few recipes from there. I'm not the greatest cook, but the one's I tried worked out just fine and a couple have been added to my regular meal list. :) I agree that I hope it continues on. I might go post one of my favourite dishes now. :D

I had a sweet potato veggie curry the other day and it genuinely very nice. Chose it over a chicken curry too which I even surprised myself.
 
Just remember to replace lost nutrients which are normally available in meat only.
 
You have to make sure you take iron tabs with correct foods/drinks as well.
 
If you go veggie, you gotta be able to make a good tofu.

1. press it very hard over the sink, so the water comes out
2. crumble it into bits, though don't make it too tiny
3. (optional) soak it in soy sauce, or whatever you want it to taste like. Tofu is basically like a protein sponge
4. fry it with a good amount of fat, because you don't want it to get too dry and put whatever seasoning on it. the frying might take a little longer than meat

When you get some experience, you can use it for anything you like, chili, burritos. Tomorrow I have a date and will bribe with some tofu lasagna.
 
I feel like tofu is up there in the vegan junk food category. Am I wrong?
 
From time to time, I will make a very nice fettucine prima vera. Or vegetarian chow mein. Sadly, most of the things I cook aren't really a recipe per se. I just start preparing and go into a zone and before I know it, I have an enjoyable dish in front of me. I honestly rarely cook a dish the same way every time. Kinda like Bob Dylan singing his songs. Every performance is different.
 
I've had some veggie roommates, here's what I learned:
Blending cashews creates a paste that's great as a substitute for cheese in lasagna and stuff.
Also, bring on the many fruit shakes and smoothies.

I done that today. I love making vegetable curries, and they are never the same.
It's usually just a way for me to use up a lot of vegetables that need using up.
So it keeps it interesting for me.
