It was the yolks. I overcooked / grilled? I've made it before and the yolks were runny and perfect. This, not so much.
There's a very short time to get the perfect yolk!
French food is overrated
Cup and char pepperoni are my favourite. Hard to source in Canada. I need to get back to the US and get some more.
