As far as I can tell, these hockey “tournaments” are just warm ups for the US and Canada where they beat on everyone else and then automatically go to the gold medal game

In the women's, yes. No other countries come close to Canada and USA. It's a growing game, other countries are getting better. But still nowhere close.

For the men's side it's a little more competitive. Canada and US are still the top, especially with Russia not allowed to compete. Sweden and Finland are always impressive, Czechia is always competitive and up and comers like Germany, Switzerland, and Denmark are fully capable of sneaky wins.

Don’t a lot of the NHL players come from some of those countries? There isn’t a professional women’s league, correct?
