I posted about this on another thread, so here’s the actual recipe. Nom nom nom...

Mashed Sweet Potato Casserole

Ingredients

4 medium sweet potatoes (about 1 3/4 pounds)

1 cup granulated sugar

1 cup milk

2 large eggs

1 teaspoon vanilla extract

1 teaspoon salt

1 cup packed dark brown sugar

1 cup pecans, chopped

1/2 cup all-purpose flour

6 tablespoons unsalted butter, at room temperature

Directions
  1. Preheat the oven to 375 degrees F. Put the sweet potatoes on the oven rack and bake until fork-tender, about 45 minutes. When the potatoes are finished cooking, let cool slightly, about 5 minutes. Slice them open lengthwise and scrape out the flesh with a fork into a large bowl. Increase the oven temperature to 400 degrees F. (350° works better for me)
  2. Add the granulated sugar, milk, eggs, vanilla and salt to the bowl with the sweet potatoes. Mash the mixture with a potato masher until combined and slightly lumpy-you don't want it to be perfectly smooth.
  3. Now, in a separate bowl, mash the brown sugar, pecans, flour and butter with a pastry cutter or fork until thoroughly combined. The mixture should resemble a crumble.
  4. Spread the sweet potato mixture in a 14-cup oval-shaped baking dish and sprinkle the crumb mixture all over the top. Bake until golden brown, about 30 minutes.

A traditional Savoyard fondue recipe made with comté, emmental and beaufort cheeses cooked with white wine and garlic.

114288089_o__01.jpg

  • Etape : 1
Remove the rind from the cheeses and cut each cheese into small cubes. Cut the bread into small pieces.

  • Etape : 2
Rub the fondue pot with the garlic clove and then add the white wine (reserving a small glass). Place this over a low heat.

  • Etape : 3
Add the corn starch to the small glass of white wine, mix together and add to the fondue pot. Add the cheese a handful at a time and stir until it melts. Stir in a figure of eight pattern until you have a smooth, creamy fondue. The fondue should resemble a thick sauce: if it is too thick, add a little more warmed white wine. If is too thin, add more cheese or corn starch mixed with white wine.

  • Etape : 4
Remove the fondue pot from the heat and add the pepper, nutmeg and salt. Place the fondue pot on a hot plate or burner on the table to serve. Stir often to keep the fondue smooth.

  • Etape : 5
Spear the bread on to fondue forks, dip into the fondue and enjoy!

Chocolate Orange Banana Bread

Ingredients
  • 275g plain flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 medium ripe bananas, mashed
  • 75g butter, melted (could try coconut oil as a substitute)
  • 70g honey
  • 50g plain yogurt (I use whole milk natural yogurt)
  • 1 medium egg
  • 2 tsp vanilla extract
  • 1 orange
  • 75g chocolate chunks

    Method
    1. Preheat oven to gas mark 4 (350f). Grease and flour a 2lb baking tin
    2. Add flour, baking soda and baking powder to a bowl and mix with a spoon
    3. In another bowl add mashed banana, butter, honey, yogurt, egg and vanilla extract and mix with a spoon
    4. Add the zest and juice of the whole orange and mix again
    5. Add the wet ingredients to the dry ingredients and mix with a spoon (don't over mix, just enough that everything's combined)
    6. Stir in the chocolate chips
    7. Pour the mixture into the tin and bake in centre of the oven for 30 minutes
    8. Remove, cover loosely with tin foil (to stop the top of the bread getting too brown) and then return to the oven for another 25-35 minutes (until bread is cooked through and if you insert a skewer, it comes out dry)
    9. Remove from the oven once cooked, let it cool for 5-10 min and then tip tin upside down to remove bread
    10. Eat your banananana bread

I smoked oatmeal then let it soak over night. The heated it up this morning. I added sun dried tomatoes, Italian seasonings, feta cheese and a fried egg. It was surprisingly delicious
