Culinary Anything Edible

Cheese and courgette bites. Simple recipe to use up my homegrown courgettes.

1 large courgette, grated
2 slices wholemeal bread, blitzed to crumbs
2 eggs
60g strong cheese, grated

Mix it all together and then dollop balls of mixture onto a lined baking tray. Cook on gas mark 6 for 20-25 mins.

They also freeze well for up to 3 months, so a good one to batch make and then get out as and when for a snack/lunch/whatever.

Green and yellow pepper from the garden, turnip from the garden, onion from the garden, garlic, mushrooms, eggs, ham, seasoned with sea salt, black peppers oregano, basil and garden dill.

Side of garden grape tomatoes and cucumber.

Pumpernickel bread with cream cheese.

Coffee with oatmeal "milk" (bleh).

That looks delicious.. do you use basil and such from your own garden?
 
Yeah, I have about a thousand (exaggerating) basil bushes lol (I grow most, common herbs as pest deterrents, which double as seasoning--win-win). I still have some dried basil from over a year go, which I use in other things.

I don’t really fancy the dried herbs.. but if I buy fresh ones, I always end up throwing a lot away.. which is food abuse!
 
Basic herbs are just weeds, tbh... You can grow them almost anywhere and they require very, very little maintenance. You could plant a ton of them in planters around the home and it'll smell great too. Mint, basil and dill are especially aromatic if you're into those smells. No need to buy stuff like basil, dill and other grassy/leafy herbs.

Try drying some when you buy them, just dry them as whole leaves. When it's time to use them, crumble them and they'll smell just like fresh ones. Dried basil leaves and crushed right before cooking are especially great.

Doesn't need to be fancy either. Just keep the soil moist, but not wet.

Veggie spirals with freshly homemade pasta sauce.

Well diced mushrooms in olive oil, fried until brown, then added fatty bacon-like ham (finely diced, white onion and red onion well diced, four garlic cloves finely diced and fried everything until onions are translucent.
Added a few large, diced then crusted tomatoes, bunch of shredded lemon basil leaves, little bit of oregano leaves, black pepper, sea salt and cumin.
Simmmered it for about 30 minutes, stirring occasionally, then poured it over veggie pasta spirals and sprinkled a bunch of Parmesan on top nmmmmm...

Ridiculously delish.
