I won't be using the real name of these by fear of being banned by error. :D

I'm looking for one that can reset my history from scratch. I know it is linked to my Health app on iOS but even when I reset it, my other app (for example StepsApp) still keeps my hold data.

Can someone help me with this ?

Any apps that allows me to reset my stats ?
How can I make a cold reset on a step counter app as I was born today ?

You an just get another counter
 
If you delete the app, it usually loses its data. Download it again it may be reset. Worth a shot.
 
I would look at clearing the cache and data of the old app.

If that doesn't resolve it. Perhaps look at ccleaner for iPhone. That can go through and remove old date and might resolve the issue. Works very well on Android phones.
 
If you delete the app, it cleans the data. Just make sure backup option for app is disabled.
 
Nope it doesn't work.

I even rebooted my phone with factory settings and it didn't worked.

Oh well. I'll try what Lupine said.
