So smashed new potatoes with the skins on. Then through in creme fresh, chopped spring onions and season how ever you want.

If you want to go extreme add some cheese to the mix and melt in or on top of.

When I read the first post here, my mind instantly went to that scene in "Forest Gump" where Bubba was talking about all the ways to prepare shrimp.

As far as potatoes goes, I have to go with the way my late mom used to prepare them. Small potatoes from a can, stove top skillet with butter and salt until lightly browned.
