I don't roast chicken, but the couple times I've done it, I mixed fresh dill, fresh gsrlic, freshly ground black pepper, sea salt with softened butter and rubbed the mix under the skin, with thin lemon slices, oil, salt, rosemary and pepper on the outside. Fucking delicious. I should do one soon.
