I hold them at each end and nibble the meat off all round it. Then I lick the mess off my fingers.

I separate the egg whites and yolks. scramble the whites with salt and pepper and butter, when cooked, I add the yolks which I've whisked, and gently cook (always really low heat) until the yolk is tempered enough and serve runny.
