4tbsp whipping cream, heated in a saucepan (don’t boil) and then mixed with the chocolate and sugar until they form a smooth consistency.

4tbsp whipping cream, heated in a saucepan (don’t boil) and then mixed with the chocolate and sugar until they form a smooth consistency.
Roll out puff pastry sheet around ¼ cm thick. Cut into large squares, fold them in half and cut each folded triangle into two pieces;
Place a tablespoon of pear filling on one half of each triangle, brush the edges with cold water very slightly, then fold triangles in half and pinch the edges together. Press the edges down with a fork to secure them better and cut off any messy pieces of puff pastry to make each turnover into a perfect triangle;
Brush turnovers with a whisked egg, top with brown sugar and after that make a few slits on top of each pastry triangle to let the steam escape;
